THIS PASTRY COURSE TEACHES THE ESSENTIAL PASTRY CHEF SKILLS REQUIRED TO CREATE BEAUTIFUL TARTS, AN INDULGENT GATEAUX, DELICATE PETIT FOURS AND ADVANCED FRENCH PASTRIES.
The Pastry Masterchef course is suitable for chefs, caterers, home cooks and anyone wishing to develop professional pastry making skills. A two day course which provides a comprehensive overview of the essential skills required to create beautiful gateau, gourmet tarts, petit fours and French pastries. Participants on the Pastry Masterchef courses are limited (3-6 attendees) allowing for a greater level of personal tuition.
COURSE MODULES:
Advanced Tarts - This pastry chef course combines traditional French techniques and cutting edge innovations in glazing and garnishing. Develop advanced pastry skills and you prepare a selection of mouthwatering tarts. Practice advanced chocolate work as you prepare and apply an intricate selection of chocolate garnishes.
French Style Gateau - Unlock the secrets of the French gateau as you prepare and assemble an indulgent chocolate mousse cake. During this pastry chef class you will learn a combination of traditional and modern techniques as you prepare each component of your gateau. The course also teaches professional glazing and includes instruction on the preparation of chocolate garnishes including chocolate discs, fans and needles.
Petit Fours - A petit four is a small confection enjoyed with dessert or coffee at the end of a meal. This module teaches the elements of petit fours (ganache, meringue, butter cream, citrus zest) and explores how they can be brought together to create miniature works of art. Let our pastry chef guide you in making macaroons, mini raspberry and savin tarts, chocolate cups and Macadamia nut tarts. Learn how to individually decorate each of your creations.
Advanced Patisserie – Bring your pastry chef skills up to date with knowledge of the latest patisserie making techniques and equipment. This module teaches the skills required to produce a wide range of gourmet patisserie. You will learn modern pastry chef skills which will allow you to develop, prepare and deliver a stunning selection of French pastries.
