Who's the essential pastry skills masterclass suitable for?
The Pastry masterclass course is an intensive and challenging two days aimed at chefs, students, business owners and the home baking enthusiasts who wish to gain the latest pastry skills and techniques.
What pastry skills will I learn?
Cocoa Black’s Pastry masterclass allows you to learn and practice a comprehensive set of pastry skills. Ruth will provide instruction in the specialist techniques needed for creative pastry work, whether at home or in a professional kitchen.
During this pastry course, you will be taught a number of skills which include:
1. Advanced Gateau
Learn how to make Ruth’s plum gateaux competition cake from the World Chocolate Masters. Explore a combination of traditional and modern pastry techniques as you prepare, assemble, glaze and garnish this complex rich chocolate mousse cake.
2. Petits Gateaux
Discover new pastry skills as you prepare and decorate a range of petits gateaux: a raspberry chocolate slice, a caramel mousse and a moist chocolate & almond sponge.
3. Miniature Teacakes
Practise the skills required to make beautiful miniature afternoon teacakes including macaroons, teacakes, pecan nut tarts and friands.
4. Cheesecakes, Tarts & Custard
Prepare and decorate a baked cheesecake, a selection of tarts and the perfect pastry cream (crème patissiere).
Who's my masterclass tutor?
Award winning pastry chef and chocolatier, Ruth Hinks will deliver this two day course. With over two decades industry experience, Ruth has a vast amount of knowledge which she wishes to transfer to course participants.
Do I need to bring anything?
On arriving at the Chocolate & Pastry School, you’ll be supplied with an apron and all the equipment and ingredients needed for your course. We recommend that you wear comfortable shoes.
What will happen on the day?
Arriving 10-15 minutes before the class starts, you will be receive a warm welcome from our class tutor and an offering of hot chocolate, tea or coffee. During the course, you’ll work individually, under close supervision from Ruth. Lunch, refreshments and snacks will be provided.
You will go home equipped with everything you have made, knowledge of the very latest pastry-making techniques and equipment, and a certificate signed by Ruth. You can also purchase professional pastry equipment and ingredients on the day, or from our online shop.

Cocoa Black is unable to offer any refunds should you decide to cancel or are unable to attend your course. It is advised that students arrange adequate insurance to cover unforeseen events such as adverse weather, illness or cancellation of a course for which travel and accommodation costs have been incurred.
Students who are unable to attend may transfer to another course if Cocoa Black is able to re-sell their place to another student. This transfer is solely at the discretion of Cocoa Black.
