Hans Ovando Chocolate Masterclass
Spend two days with Hans Ovando (Spanish Chocolate Master) at The Chocolate & Pastry School in Peebles near Edinburgh. Discover his favourite recipes as you prepare a selection of: filled and flavoured chocolate bars, dragées, chocolate snacks, pralines and moulded bon bons. Participants receive a signed certificate.

Who’s the Hans Ovando Chocolate Masterclass suitable for?
The Hans Ovando Chocolate Masterclass has been designed for pastry chefs, chocolatiers, students & chocolate enthusiasts. Participants typically have an intermediate skill level in chocolate and are seeking to develop their product repertoire.

About Hans Ovando
Hans is one of the world’s top chocolatiers. In 2013, he represented Spain at the World Chocolate Masters in Paris. Hans is in high demand as a chef tutor and he regularly demonstrates around the world. His relaxed informal style of teaching and passion for passing on knowledge is evident in each of his classes.

Do I need to bring anything?
On arriving at The Chocolate & Pastry School, you’ll be supplied with all the equipment and ingredients needed for your course. Participants are required to bring their own chefs jacket.

What Will I Take Home?

Moulds bonbons:

    • Lemon Pie: Cream marshmallow, lemon and lime ganache and vanilla sable crunchy.
    • Strawberry cheese cake: Raspberry jam, cheese cake ganache and butter cookies base.
    • Blackforest cherry: Cherry coulis, milk chocolate ganache and crunchy chocolate sable. 
    • Pistachio lovers and berries: Pistachio gianduja, milk chocolate pistachio ganache, raspberries and pistachio salted crunchy.

Cutting bonbons giandujas/caramel and ganache:


    • Snickers my way: vanilla caramel and peanut butter gianduja.
    • Exotic Bounty: Pineapple and vanilla marmalade, passion fruit, coconut lime marzipan.
    • Mango enchilada: Tomato and paprika pate de fruit and mango lime ganache.
    • Coffee Caramel Mars: Almond gianduja, salted cinnamon caramel and chocolate nougat.
