Would you like to learn creative chocolate skills?
Learn professional chocolatier skills at The Chocolate & Pastry School in Peebles, near Edinburgh. Developed by Ruth Hinks, this two day practical chocolate course builds upon the skills taught in Masterclass Level 1: Essential Chocolate Skills. Participants receive a signed certificate.

What chocolate skills will I learn?
During the creative chocolate skills course, you’ll work individually and in pairs under close supervision from Ruth. You’ll gain an in-depth knowledge of chocolate theory and practical experience in artisan chocolate making. During the course you will also explore:
• flavour matching origin chocolate
• machine tempering
• adding colour to your chocolates
• techniques for increasing the shelf life
• adding texture to fillings
• creating multi-layered chocolate fillings
• chocolate garnishes
• spray painting chocolate with an air brush and compressor
• recognising and rectifying common mistakes
• key information sources
• industry suppliers

Who’s the Creative Chocolate Skills with Ruth Hinks suitable for?
This masterclass has been designed for chefs, students and foodies.  Participants will typically have a good working knowledge of chocolate or will have completed our Chocolate Masterclass Level 1. This masterclass regularly attracts participants from the UK, Europe and the USA.

What Will I Take Home?

Chocolate School

You’ll learn the very latest techniques for working with chocolate and pastry, and take home all your delicious confections. From our chocolate classes, you can expect to leave with 50 – 60 beautifully packaged chocolates. From our patisserie classes, you’ll take home 20 – 25 individual patisserie, beautifully boxed and ready to amaze your friends and family. You’ll also be provided with a course recipe book, so you can practise what you’ve learnt at home.
