Essential Chocolate Skills with Ruth Hinks

Would you like to learn how to become a chocolatier?
Learn how to become a chocolatier at The Chocolate & Pastry School near Edinburgh, UK. Developed by UK World Chocolate Master Ruth Hinks, this two day chocolate course teaches the theory and practical skills needed to work confidently with chocolate. Participants receive a signed certificate.

What chocolate skills will I learn?
During this masterclass, you’ll work individually under close supervision from Ruth. You’ll prepare a selection of chocolate fillings including; caramels, ganaches, truffles and pralines. You’ll learn how to make handmade chocolates, chocolate bars, chocolate lollipops and moulded chocolate figures. You’ll also explore:
• the origins of chocolate
• cocoa varieties
• chocolate making equipment
• how to correctly taste chocolate
• chocolate tempering techniques
• preparation of fillings
• the use of chocolate moulds
• how to enrobe chocolates
• the use of chocolate transfers and texture sheets
• packaging chocolates
• how to store chocolate

Chocolate School

You’ll learn the very latest techniques for working with chocolate and pastry, and take home all your delicious confections. From our chocolate classes, you can expect to leave with 50 – 60 beautifully packaged chocolates. From our patisserie classes, you’ll take home 20 – 25 individual patisserie, beautifully boxed and ready to amaze your friends and family. You’ll also be provided with a course recipe book, so you can practise what you’ve learnt at home.
