The first spoonful tastes of the bake: dark, faintly bitter, almost smoky. Then the cream cheese arrives, tangy and smooth, with a little sweetness to steady it. Nothing about it is heavy, which is why one cheesecake between two never quite feels like enough. The last bite is usually negotiated.
